8 oz chopped, pitted dried dates
1 1/2 c water
1/3 c butter
1 c brown sugar
2 tsp vanilla
2 large eggs
3 tbsp. molasses
2 tbsp. golden syrup
1 2/3 c flour
1 1/2 tsp baking powder
1 tsp baking soda

Toffee Sauce:
1/2 c whipping cream
1/4 c butter
1/4 c brown sugar
1 tbsp. molasses
2 tbsp. golden syrup
2 tsp vanilla
Directions:
Directions:
1. Add dates and water to a small saucepan
2. Bring to a boil and simmer over low heat for a couple min. Let stand
3. Cream together butter, brown sugar and vanilla.
4. Add eggs
5. Add molasses and syrup and beat well
6. Sift together flour and baking powder.
7. Add dry ingredients to the wet.
8. Puree the date mixture in a food processor and then mix in the baking soda
9. Add this to the batter
10.Pour batter into greased muffin cups and bake 18-20 min at 350F
11. To make sauce, mix all ingredients and bring to a boil for 2 min. Serve over puddings.
