4 large boneless skinless chicken breast
1/2 cup butter, softened
1 tsp. chopped parsley
1 tbsp. of mixed dry herbs(basil, oregano, marjoram, thyme, or any other combinations)
2 oz. Monterey Jack, Gouda or Mozzarella cheese.
1/2 cups Panko breadcrumbs
1/4 cup white wine
hot buttered wide egg noodles
Garlic salt

Directions:

Use meat mallet to pound chicken breast thin. Combine butter parsley, oregano and fine herbs together. Dot half the mixture on the chicken breasts. Place a stick of the cheese on each breast and roll up. Melt the remaining butter in a microwave and brush over the chicken rolls. Roll the rolls in the breadcrumbs and secure with a toothpick. Sear in a little oil in a frying pan on med high heat on all sides. Just to get a bit of browning on the outside. Place the rolls seam side down in a oven proof dish. Bake at 350 degrees for 20 min. Drizzle remaining butter and the wine over the chicken and continue to bake for 20 more minutes.
Use thermometer to check temperature. Should read 173-175. Don't over cook chicken or it will be dry. Remember it will continue to cook after you take it out of the oven and let it rest. Place hot buttered noodles seasoned with garlic salt to taste on the plate. Place chicken on top and drizzle the juices over the whole dish. Serve with a side of peas.

This dish is for all the Chicken Lovers out there! This dish was a favorite of Scott and Chris' growing up. I have also served it to company.. If I wanted to try a new recipe to serve to company I would always serve it to my kids first. If it passed their approval then it was good for company. Serve anything with noodles and most kids will eat it.
Pure comfort food.
