2 pans cornbread, crumbled
1 c stuffing mix (1 box)
1 onion, finely chopped
2 stalks celery, chopped
1 T olive oil
2 eggs
1 boiled egg, chopped
1 t salt
1 t pepper
2 t poultry seasoning
1 T sugar
Chopped chicken (optional)
Chicken broth

Directions:
Directions:
Put olive oil in a skillet and heat, then add onion and celery, cook until clear.

In a large bowl, add the onion and celery to the crumbled cornbread
Add the eggs and seasonings.
Turn into a 12" x 9" casserole baking dish
Cover with chicken broth
Cover with foil
Bake at 350 for one hour - 1 1/2 hours or until broth is gone and dressing is fluffy. It should not be gummy or sticky.

Mama made this dressing every Thanksgiving, and now my sister, Kathy Doty, and I make it. This is a no-fail recipe and tastes just as good after Thanksgiving.

Our uncle Bill made also made an oyster dressing, but I've yet to find his recipe - please let me know if you have!
