2C All-purpose Flour OR 2 1/4C cake and pastry Flour
1tsp Baking Powder
1/2tsp Baking Soda
1/4tsp Salt
1 1/4C Crisco shortening
3 Eggs
1/2C Lemon Juice
1/2C Milk
3/4C chopped Pecans

Divided LEMON GLAZE

LEMON GLAZE
Combine 1/3C sifted Icing Sugar and 1/4C Lemon Juice


Stir flower, baking powder, baking soda and salt together- set aside

In large mixer bowl beat sugar and shortening until fluffy

Add eggs, one at a time- beat well after each addition

Gradually beat in lemon juice

Add milk alternating with dry ingredients

Stir in the nuts

Turn into greased 9x5x3 loaf pan

Bake 350F for 55-60mins OR until done

Remove from oven

While in pan, poke holes in bread 1" apart

Slowly pour half lemon glaze over warm bread

Cool 10 mins

Remove from pan

Pour remaining glaze over bread

Cool completely
