1 c cornmeal
1 t salt
1 t sugar
3/4 c boiling water
1 T shortening
Bacon fat or oil for frying (I mix bacon fat into the oil)

Directions:
Directions:
In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening. Stir until shortening melts. Let barely cool
Heat oil/bacon fat to 375ºF in a large skillet.
Drop into balls and flatten with a spoon
Turning once, until crisp and golden brown, about 5 minutes
Drain on paper towell
