2-quart baking dish
16 ounces cooked chicken, shredded
1 Tbs oil
1 yellow bell pepper, roughly chopped
1 red bell pepper, roughly chopped
1/2 onion, roughly chopped
1/4 tsp salt
1/4 tsp ground black pepper
1/2 Tbs minced garlic
8 ounces Mexican blend cheese, divided
4 lightly beaten eggs
1/4 cup heavy cream
3/4 cup chicken stock
3/4 tsp xanthan gum
1/4 cup water
Fajita seasoning (see below)
1/4 cup pickled jalapenos

Fajita seasoning:
1/2 Tbs chili powder
3/4 tsp cumin
1/2 tsp paprika
3/4 tsp garlic powder
3/4 tsp onion powder
Granulated sugar substitute = 1/2 tsp sugar
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1 1/2 tsp salt
1 tsp ground black pepper

Directions:

Combine Fajita seasoning ingredients mixing well and set aside.
Add oil to skillet then add peppers and onions and saute about 5 minutes to soften. About 4 minutes into cooking stir in minced garlic and cook another minute or so. Remove from heat and set aside.
Next make your own cream of chicken soup by adding chicken stock to bowl and whisk in the xantan gum. Add the heavy cream to a saucepot on medium heat. Stir in the chicken stock and continue to stir and cool until it becomes very thick. Stir in a 1/4 cup of water and remove from heat.
To a large mixing bowl add the shredded cooked chicken, pepper and onion mixture, fajita seasoning, 1 cup of the shredded cheese, 4 lightly beaten eggs, and our homemade cream of chicken soup. Mix well and pour into greased baking dish.
Cover and bake at 350 for 25 minutes.
Remove from oven and top with the other cup of cheese and top with some pickled jalapenos. Bake uncovered for another 15 minutes. Let cool about 10 minutes and then enjoy.
