2 c sugar
4 eggs
1 1/2 c Crisco oil
1 t cinnamon
2 t baking soda
1/3 c buttermilk
3 c sifted flour
1 t lemon juice
3 c grated carrots
1 c chopped walnuts

Cream Cheese Icing

Directions:
Directions:
Mix all ingredients and bake at 275 for 1 1/2 hours.
Make a sheet cake or 3-layer round

This was one of our favorite cakes that Mama made. We found the recipe for the cake in her recipe box, but not the cream cheese icing. Use your own. The cake is always moist and delicious because it bakes in low heat.
