3/4 c breadcrumbs
1 tbsp. melted butter
3/4 c grated old cheddar cheese
1 lb cod or haddock
2 med potatoes, quartered
1/2 c grated parmesan cheese
1 tbsp. butter
1/2 tsp paprika
dash pepper
1/4 c grated or chopped onion
1 tsp mustard
1 tbsp. parsley
1 egg, separated

Directions:
Directions:
1. Combine breadcrumbs and melted butter. Mix in 1/4 c grated cheese.
2. Steam fish 6 min or until cooked. Cool slightly and break into pieces
3. Boil potatoes. Drain water and add remaining cheese, parmesan, butter, pepper, mustard and paprika.
4. Mash until cheese is melted.
5. Using mixer, mix and add onion, parsley and egg yolk.
6. Beat egg white separately and fold into mixture.
7. Grease 12 muffin tin. Shape mix into goofball size and roll into crumbs
8. Bake at 400F for 20-30 min or until browned
