1 tablespoon olive oil
1 tablespoon butter
1 pound lean ground beef
1 small onion finely chopped
2 bunches fresh spinach, cooked, drained, and chopped. (or 1 package frozen
chopped spinach thawed and drained
teaspoon dried basil
teaspoon dried marjoram
1 teaspoon salt
teaspoon pepper
4 eggs

Directions:
Directions:
In a heavy skillet heat oil and butter over moderate heat. Swirl to evenly coat bottom of pan. Add meat and cook 5 to 7 minutes or until browned. Stir occasionally to crumble meat.

Add onion and cook until tender but not browned, about 3 to 5 minutes. Stir in spinach, basil, marjoram, salt and pepper.

Beat eggs andd add to meat mixture, stirring over moderate heat for about 3 minutes or until eggs are set.
