5 - 6 (about 1.5 to 2 pounds) chicken breasts, thinly sliced
2 packs broccoli spears
2 c. GF chicken broth
- 1 stick DF/vegan (e.g.Earth Balance) butter
bag DF/vegan (e.g. Daiya) cheese mozzarella, shredded
1 - 1 c. mayonnaise
c. GF flour
c. corn starch
3 - 4 tsp. lemon juice
3 - 4 tsp. poultry seasoning

Microwave broccoli spears for 2 minutes.

In 2-3 quart saucepan, stir in the following ingredients until the cheese melts and sauce thickens over low to medium heat.

Arrange in two layers in a medium to small casserole, the broccoli, chicken and sauce. Set aside and cover any extra broccoli, chicken or sauce. Cover layers with a coating of GF breadcrumbs (e.g. Gillian's GF breadcrumbs.)

Bake at 350 for 30-40 minutes.

While the chicken is baking, cook rice - e.g. brown Texmati to accompany.
