5 - 6 (@ 1.5 to 2 pounds) chicken breasts, thinly sliced
2 packs broccoli spears
2 c. GF chicken broth
½ - 1 stick DF (e.g.Earth Balance) butter

¾ bag DF (e.g. Daiya) mozzarella cheese, shredded
1 - 1½ c. mayonnaise
½ c. GF flour
¼ c. corn starch
3 - 4 tsp. lemon juice
3 - 4 tsp. poultry seasoning
Rice, for serving

Directions:
Directions:
Microwave broccoli spears for 2 ½ minutes. In 2 - 3 quart saucepan, over low to medium heat, stir in the chicken broth, DF butter, DF cheese, mayonnaise, flour, cornstarch and poultry seasoning until the cheese melts and sauce thickens.

In a medium casserole, arrange the broccoli, chicken and sauce in two layers. Set aside and cover with any extra broccoli, extra chicken or sauce. Cover layers with a coating of GF breadcrumbs (e.g. Gillian's GF breadcrumbs.) Bake at 350º for 30-40 minutes. While the chicken is baking, cook rice and serve chicken over rice.
