For filling:
Splash of oil
1lb. of leftover turkey or chicken (or mix beans in to augment what you have)
1 medium onion chopped
2 Tbsp chili powder
1 Tbsp cumin
1 tsp sugar
1 clove garlic, chopped
Salt to taste

For salsa:
2-3 crisp, sweet apples
1 cup cranberries
1/2 bunch cilantro
1-2 jalapeño or serrano peppers
1 onion (small-medium)


Fresh cabbage finely sliced into shreds

12 small tortillas, any type

Directions:
Directions:
Heat oil in a skillet on medium-high heat, add chopped onion and spices, cook briefly before adding meat and/or beans plus garlic.

Shred and break up the chunks of meat as it cooks, adding water if needed. Salt to taste and add sugar, mixing well.

Salsa ingredients can be chopped by hand but are easily blended in a food processor. Blend chunks of onion, hot pepper, and coarsely chopped cilantro first. Add large apple chunks, cranberries, and salt later, pulsing to chop them just until small but not puréed.

To serve, fill warmed tortillas with meat, cabbage shreds, and top with salsa.

Preparation time 30 minutes. Serves 6 (2 tacos per serving)
