1 gallon zucchini squash
2 onions
2 bell peppers
5 cups sugar
5 cups vinegar
1 T salt
2 T turmeric
1 T mustard seed
1 tsp black pepper
1/4 tsp cayenne pepper

Directions:
Directions:
Shred zucchini in food processor and chop onions and bell peppers.
Place zucchini, onions, & peppers in large pot and add 1/4 cup salt.
Cover and refrigerate overnight.
Next day, rinse completely.
Add 5 cups sugar, vinegar and spices to zucchini, onions and peppers.
Boil 10 minutes.
Transfer to jars and process in hot water bath for 10 minutes. Makes 6 pints.
