2# dry beans
1 tsp. sodaº
1½ - 2 cups brown sugar
2 tsp. dry mustard
4 tsp. molasses
½ cup catsup
2 stalks celery chopped
2 small onions chopped
6 slices bacon cut into 1 inch squares


Directions:
Directions:
Cover beans with water and soak overnight. The next day, add 1 tbsp. salt to water (which covers beans) and cook until skin breaks.

While beans are cooking add soda. Skim foam away. Add all other ingredients and mix. Bake at 275 º for 4 to 6 hours. Keep adding water during cooking process if beans start to get dry. Always tasted and adjust seasonings as beans cook.
