1# fresh asparagus
6 cups chicken stock
¼ cup chopped onion
½ cup chopped celery
3 Tbsp. butter
3 tbsp. flour
½ cup cream
Salt
Paprika
White pepper
Hard boiled eggs (optional)

Directions:
Directions:
Wash & remove tips from asparagus. Simmer the tips, covered until they are tender in a small amount of milk or water. Once tender remove from saucepan.

Cut the stalks into pieces and place in saucepan. Add stock, onion and celery. Simmer covered for ½ hour. Once the stems are tender, blend until smooth.

Melt butter and stir in flour. Slowly add cream until mixture is blended and smooth.

Add asparagus stock. Heat soup well, but do not allow to boil. (You can use a double boiler). Add asparagus. Season soup with salt, paprika, and white pepper.

Garnish with chopped hard boiled egg.
