1 cup butter, softened
7 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
4 tablespoons fresh flat-leaf parsley, finely chopped
2 tablespoons salt
1 tablespoon pepper
5-7 pounds boneless ribeye roast, trimmed

Note: Remove meat from refrigerator to bring to room temperature (about 2 hours) before applying rub mixture below and cooking

1. Preheat oven to 500° degrees.

2. Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.

3. Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.

4. Bake at 500°F for 15 minutes, then turn the oven down to 325° degrees.

5. Continue to bake roast as follows:
Size Rare Medium Rare
3 Ribs (6 to 8 lbs) 1.25-1.50 hours 1.50-1.75 hours
4 Ribs (8.5 to 10 lbs) 1.50-2.0 hours 1.75-2.25 hours
5 Ribs (10.5 to 13 lbs) 2.0 to 2.5 hours 2.25-2.75 hours
6 Ribs (14 to 16 lbs) 2.5 to 3.0 hours 3.0 to 3.5 hours
7 Ribs (16.5 to 18 lbs) 3.0 to 3.5 hours 3.5 to 4.0 hours

6. Once roast is cooked to desired doneness, remove from oven, cover with foil, and let rest for about 15 minutes before carving.

TIP: I take mine out 10 minutes before it reaches the desired doneness so it does not overcook while resting.
