2 pounds Jimmy Dean bulk Italian sausage or Bacon (I use sausage)
1 cup of sliced mushrooms-optional
1 medium onion – diced-optional
1 loaf of French bread
butter, at room temperature
2-3 cups grated cheddar cheese
8 eggs
1 quart half and half or whole milk
2 teaspoons salt
2 teaspoons dry or Dijon mustard

Directions:
Directions:
1. In large fry pan, brown sausage, then drain on paper towels.

2. Sautee onions and mushrooms in butter (4-tblsp) until tender.

3. Cut French bread into large cubes.

4. Butter a 9x13 ovenproof baking pan. Layer ½ French bread loaf in pan.

5. Add ½ sausage, and ½ mushroom and onion mixture on top of the bread, spreading evenly, and then add a layer of cheese.

6. Cover the sausage and cheese layer using the remaining ½ French bread loaf.

7. Mix together dry or Dijon mustard and salt. Combine milk, eggs, mustard and salt.

8. Pour milk mixture over top of bread, then the remainder of the cheese. Allow to stand for an hour.

9. Bake for 1 hour at 350 degrees. Use knife to test center is set.

Remove from oven and allow 10 to 15 minutes before cutting into serving sized pieces.

Note: The casserole can also me made the night before and refrigerated over night. The following day, bake at 350°F for 1 hour.
