3 eggs
2 cups grated zuchini
2 cups sugar
1 cup oil
2 Tbsp vanilla
2 1/2 cups flour
1 tsp salt
1 tsp baking soda

Directions:
Directions:
Preheat oven to 350 degrees

Beat eggs until frothy
Add zuchini, sugar, oil and vanilla

In a separate mixing bowl combine flour, salt and baking soda.
Fold in egg mixture and stir until well mixed.

Pour into a buttered loaf pan

20 minutes to prepare. Bake for 50 minutes or until fork comes out clean.
