2 1/4 cup of flour
2 tsp baking soda
1 1/2 tsp salt
3/4 cup of cocoa
1 cup vegetable oil
1 1/2 cup buttermilk (or 1/1/2 cup milk with 2 Tbsp of vinegar)
1 1/2 tsp vanilla
3 eggs
2 cups sugar

Directions:

Preheat oven to 350

Into a mixing bowl beat eggs until frothy adding sugar gradually.
In separate mixing bowl add all the other ingredients in order listed above.

Fold in eggs and sugar and mix well until well blended.

Line muffin tin with muffin cups and fill to 3/4 mark

Bake for 25 minutes or until fork comes out clean.

These cupcakes are perfect for my chocolate cake recipe, which I hadn't baked in years, but I loved making it for my family during the pandemic.
