1 1/2 cups flour
1 cup sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup of oil
1 egg plus milk to reach 1 cup mark
2 cups blueberries (fresh or frozen)

Directions:
Directions:
Preheat oven to 400 degrees

Mix egg, milk, oil together in a bowl.
Whisk with a fork. In a separate bowl mix flour, salt and baking powder.

Add wet ingredients to dry ingredients. Add blueberries and stir until ingredients mixed.

Line muffin tins with muffin cups Scoop mixture into each cup til 3/4 full. Bake for 20 minutes or until fork comes out clean. Preparation time 15 minutes.

These muffins were baked by Seppo's wife. Seppo had a stroke and I would visit as his occupational therapist in their West Barnstable home amongst the locus trees.

Often times she would send me on my way with a warm muffin in hand. Quick and easy to make and always come out just as I remembered them!
