1 package of Pancetta
1 large onion diced
4 cloves of garlic - grated or finely minced
1 fresh red pepper - diced really small
2 packages of Sazon seasoning
1/2 jar of fried peppers - finely chopped
4 cans of Kirby black beans
1 can of plain stewed tomatoes - chopped
Juice of 3 limes
1 cap full of apple cider vinegar (helps reduce gassiness)
1 bunch of cilantro finely chopped

1. Start with a thin even layer of oil on bottom of large pan. Allow the oil to heat up. (Medium/high heat)

2. Add the pancetta, onion, red pepper, fried peppers and sauté until soft and onion is translucent (about 5 min) -Then add garlic and Sazon packets. Sauté for 2 minutes.

3. Add cans of beans and stewed tomatoes to pan. Reduce heat to medium low and let cook together for 5 minutes.

4. Add lime juice, apple cider vinegar and half of cilantro. Stir, cover, and reduce heat to low. Cook for 20-30 minutes. Stirring every 7-10 minutes or so.

5. Add remaining cilantro and stir until combined. Serve over rice and enjoy.
