1 cup peanut butter
2/3 cup shortening
1 ½ cups brown sugar
1 ½ cups white sugar
1 teaspoon vanilla
4 eggs
1 ½ cups pecan chopped
1 cup coconut
3 cups flour
2 Tsp of baking powder
½ teaspoons of salt

Directions:

Mix first 6 ingredients
Cream batter
Should be stiff
Spread in extra-large baking cake pan
Bake 35 to 40 minutes at 350°
Cool slightly & cut into 2 inch squares

I remember these being one of Daddy's favorite holiday cookies. Mine too. There was something about the peanut butter, and coconut that kept them so moist. This recipe makes a bunch of bars. Nana would seal them up in a big Tupperware container and they would last for at least a couple of weeks if they were kept hidden.
They just got better with time.
