1 onion chopped
1 red or green bell pepper chopped
2 cloves garlic minced
1 can black beans, drained
1 cup (or so) corn (could substitute cooked rice or other grain)
1 cup of your favorite salsa
Chopped cilantro if you have it & like it
1T or so of Cumin (gives the Mexican flavor without adding spicy heat)

Directions:
Directions:

On medium-high heat, sauté onion until translucent and lightly golden.

You can do a dry sauté with a splash of water, or use a couple of tablespoons of your preferred oil.

Add the garlic and the cumin, if using, and stir for 2-3 minutes, and then add the bell pepper and cook for another 3 minutes.

Lower the heat and add the beans, the corn, and the rice/grains.

Cook until the mix is heated through, then turn off the heat and sprinkle with the cilantro.

Perfect for tacos and bowls.

Preparation time 20 minutes. Serves 4-6
