Ingredients: CRUST: 1 C (approximately 20) Vanilla Wafers, crushed ½ C Macadamia Nuts, finely chopped ¼ C Butter, melted
FILLING: 1 Can Eagle Brand Sweetened Condensed Milk 3 Tbls Lemon Juice 3 Tbls Orange-Flavored Liqueur or Orange Juice 1 Pkg Frozen Raspberries with Syrup, thawed (10 oz package) 1 C Heavy Whipping Cream, whipped

Directions:Crust: Heat oven to 375º. In small bowl combine all crust ingredients. I use a food processor to crush vanilla wafers and chop macadamia nuts. Mix Well. Press firmly in bottom of 8-inch spring form pan. Bake for 8 to 10 minutes.
Filling: In large bowl, combine condensed milk, lemon juice and orange liqueur and beat until smooth, then add raspberries and beat on low speed until well blended.
In separate bowl, beat whipping cream until firm. Fold whipping cream into filling mixture and pour over crust. Freeze until firm.
Let stand at room temperature for about 15 minutes before serving. |

Notes: I like to top this with warmed Chocolate Sauce when serving. You can also just garnish with shaved chocolate or whipping cream and a few whole raspberries.
CHOCOLATE SAUCE:
Melt 1 C Chocolate Chips and 1/2 C Butter. Add 1 1/2 C Evaporated Milk and approximately 2 C Powdered Sugar. Stir constantly until smooth and thick and remove from heat. Add 1 tsp Vanilla
