5 cups uncooked rice (Uncle Ben’s)
2 14oz cans Unsweetened coconut milk
3 14oz cans chicken broth
1 large onion chopped
Olive oil to coat pan
1 tsp chopped garlic
1 tbsp curry powder
1 tbsp chicken bouillon
1 tbsp beef bouillon
Butter
Green onions

Directions:
Directions:
Coat Large non stick fry pan with olive oil
Sauté chopped onion and garlic
Add uncooked rice, stir to coat with oil and mix in onions.
Add seasonings; curry, bouillon
Stir in coconut milk and broth
Bring to boil, stirring well.
Pour mixture into a large buttered casserole pan, cover with foil.
Bake in preheated oven at 350 degrees, check for doneness after 20 minutes. (Rice is soft and liquid is absorbed)
Add 2 tbsp butter and mix well.
Top with sliced green onions.
