Spicy Flatbread (Bara)
3 cups flour
1 tsp cumin
1/2-1 tsp turmeric
2 tsp active or dry yeast
1/2 tsp salt
1/2 tsp white pepper
1 1/4 cup warm water or more to adjust to form soft dough
1 tbsp sugar

Chickpeas
Canola oil
2-3 tablespoons curry powder (madras) yellow is best
1 large onion diced
2 tsp minced garlic
1/2 tsp cumin
1/4 tsp white pepper
2 cans chick peas
1/2 tbs chicken bouillon (optional)
2 cups or more broth or water
dash of paprika or cayenne
2 green onions chopped
salt to taste

Spicy Flatbread - In large bowl combine all purpose flour, yeast, salt, sugar, cumin,tumeric; thoroughly mix; add warm water a little at a time until soft ball forms; use oil on hands to prevent from sticking; knead for 2 minutes; place in oil bowl and set in warm area to rise and double in size (1-2 hrs) punch down; divide into 18 pieces; place on rolling board to roll out flat; set aside and place directly in frying pan to cook; bars should puff up; place on paper towel to soak up excess oil; serve by placing chickpea filling on it and folding over like a taco (or make a sandwich with two bars)

Chickpea filling -heat oil in saucepan; add onions, garlic and spices and stir for 2-3 min until onion is translucent; add stock/water to prevent burning; add chickpeas, green onion and stir; bring to a boil and let simmer until thickens (can add a touch of flour to thicken if too thin); adjust salt and pepper and add parsley. Serve with Scotch Bonnet pepper to add spice

Trinidian Street Food - Doubles is a dish found at street vendors; curry chickpeas and spicy flatbread; When we had a family reunion in Trinidad in 1989 I would saver the curry dripping from the "Doubles" wrapped in tinfoil..... mmmmm

If you have access to a Caribbean market - purchase the Doubles (flatbread) and make your own curry chickpeas...
