1 T butter
3 1/2 cups peeled, chopped Butternut squash - (1 1/2 lbs)
3/4 cups of chopped carrots
1/2 cup sweet chopped onion
2 1/2 cups chicken broth
1/4 cup half and half
1/8 t salt


Directions:
Directions:
Saute' carrots, squash and onions in butter over medium heat for about 12 minutes.

Add chicken broth and bring to a boil. Cover, reduce heat and simmer for 30 minutes. Remove from heat and stir in half & half and salt.

Using an immersion blender or regular blender to blend until smooth.


NOTE: Serve with toasted toast points topped with swiss cheese.
