crust: buy graham cracker crust
filling
3 egg yolks
1 1/2 tsp zest (4 limes)
1 14oz sweetened condensed milk
2/3 c fresh key lime juice (about 18 limes) or bottled key lime -- fresh is superior
whipped cream topping
3 T confection sugar
1 c heavy cream
2 limes for decoration/trimming

preheat oven to 350º; in mixer beat egg yolks and lime zest at high speed till very shiny about 5 minutes; gradually add condensed milk; continue to beat till thick about 3-4minutes; reduce speed of mixer to low and add lime juice and mix till combined; pour lime mixture into crust; bake till filling has set about 10-15 minutes; cool to room temperature then refrigerate. To serve: place pie in freezer for 15-20 minutes before serving; make whipped cream topping and place dollop on each piece of pie;
