2 cups sugar
2 cups oil
2 eggs
2 1/2 cups flour
1 t soda
1 t cocoa
1 t salt
1 t white vinegar
1 c. buttermilk
1 t vanilla
1 bottle red food coloring (can use less)
1 block of cream cheese
1 stick of butter
1 lbs. powdered sugar
1 t vanilla
1 c. chopped pecans (optional)
Directions:
Directions:
Cream sugar and oil. Add eggs one at a time and mix Sift all dry ingredients 6-8 times.
Alternatively add the sifted flour mixture and buttermilk, mixing after each addition.
Add vinegar, vanilla, and food coloring. Pour into 3 lined and greased 9-inch cake pans. Bake for 25-35 minutes. Allow to cool. Combine cream cheese and butter.
Slowly add powdered sugar. Add vanilla and pecans (if you use them.) Frost the cake.

I do not sift 6-8 times. I only sift 1-2 times. You do not have to add all the food coloring. The color just won't be as bright. This is a dense cake, but do not overbake it.
I always double the frosting recipe. Always.
