1 Tbsp olive oil
1 lb protein (sliced Italian sausage links, 1 inch cubes of chicken breast, meatballs, or shrimp)
¼ cup vodka
1 pint marinara sauce
1 pint heavy whipping cream
Salt to taste
¼ cup fresh basil, chopped
Parmesan cheese, grated
1 lb penne pasta, cooked

Heat olive oil in large pan. Sauté protein of choice until almost cooked (or skip this step for a meatless option). Add vodka and allow to reduce, about 1 minute. If using a gas stove, let the flame touch the liquid for a flambé! Add marinara, cream, and salt. Cook until sauce thickens. Add basil and a handful of grated parmesan, stir, then add the pasta.

Any of the listed proteins work great with the sauce, but it is also delicious on its own. For another variation, you could saute sliced cremini mushrooms in place of the meat.
