1 zucchini squash
3 slices mozzarella
12-14 slices pepperoni
⅛ - ¼ tsp crushed red pepper (optional)
Pair of chopsticks

Directions:
Directions:
Preheat oven to 425º. wash and dry zucchini and slice off the ends. Line up chopsticks on both sides of zucchini and slice until you hit the chopsticks. Start at one end and keep slicing into disks. If it is more manageable, you can cut the zucchini into smaller sections. Line baking sheet with foil. Place on baking sheet. Stuff cheese and pepperoni between each disk, alternating between each. Season with red pepper flakes, if using, and top with another piece of foil. Pinch and fold to make a foil pouch. Bake for 20 minutes for al dente zucchini and 5-10 minutes more for softer zucchini. Allow to rest for 5 minutes.
