3 c. shredded rotisserie chicken meat
2 c. Monterey jack cheese
¾ c. jarred pickled jalapenos, chopped fine
½ c. corn kernels
¼ t. pepper
4 10-inch flour tortillas
3 T. vegetable oil
For Serving: sour cream and salsa

Directions:
1. Combine chicken, cheese, jalapenos, corn and pepper in a bowl. Spread a heaping cup of chicken mixture over half of each tortilla, leaving a ½ inch border at edge. Fold tortillas over filling, pressing firmly to seal.
2. Heat 2 tablespoons oil in 12-inch skillet over medium-high heat. Place 2 quesadillas in; weigh down with large saucepan. Cook until brown and cheese has melted; about 2 minutes per side.
3. Use remaining 1 tablespoon oil to cook the last 2 quesadillas the same way.
4. Cut into wedges. Serve with sour cream and salsa on the side.
