2 T. olive oil
1 yellow or orange bell pepper; chopped
1 large poblano pepper; chopped
2 garlic cloves; minced
1 lb. ground turkey
2 28-oz. cans diced tomatoes
2 15-oz. cans black beans; rinsed and drained
3 T. tomato paste
3 T. chili powder
2 t. cumin
1 ˝ t. agave or 2 t. sugar
Juice of 1 lime
salt to taste
Shredded cheddar and cilantro for serving

1. Heat oil in large pot over medium-high heat. Sauté peppers and garlic; stirring often, 5 to 6 minutes. Add turkey, increase heat to high and cook; stirring often and breaking meat into crumbles until it is no longer pink, 4 to 5 minutes.
2. Stir in the tomatoes, beans, tomato paste, chili powder, cumin and agave. Cover and bring to a boil; stirring often. Reduce heat and simmer; stirring occasionally until flavors are blended, 45 minutes to an hour.
3. Stir in lime juice and add salt to taste. Serve with cheese and cilantro.

This is a great recipe for a cold day! It is one of Andrew and Canyon's favorite recipes I would make for dinner. We don't serve it with the cilantro, but that is just a matter of taste.
