2 chicken breasts; boneless and skinless
8 c. water
4 T. chicken broth base; heaping
4 celery ribs; diced
3 carrots; diced
1 red bell pepper; diced
2 medium potatoes; peeled and diced
1 14.5-oz can diced tomatoes
½ c. fresh Italian parsley
5 garlic cloves; minced
1 T. dried Italian seasoning (Chef Paul's pasta seasoning is our favorite)
To taste: salt and pepper
½ lb. ditalini pasta; cooked al dente
Shredded asiago or parmesan cheese for serving

1. In large slow cooker, add chicken breast, water, soup base, celery, carrots, potatoes, tomatoes with juices, garlic, parsley, Italian seasonings and 2 teaspoons salt and pepper.
2. Cook on high for 6 hours; remove chicken breasts and shred. Place back in soup and cook an additional 2 hours.
3. After 8 hours, use a potato masher to mash some of the potatoes. I take a straining spoon and pull some from the cooker and mash in a separate bowl. Then stir back into soup to give it a slightly thicker texture.
4. Add ditalini pasta to the bottom of bowls for serving and spoon soup over the top. Add salt and pepper to taste with a healthy dose of parmesan cheese on top.

This is a pretty labor-intensive soup, but it is so worth it. It is as close to the Mama's Chicken Sicilian soup that we have ordered at Carraba's as we have found. I will make it for Em at college and freeze it for her to have whenever she needs a homecooked meal that she doesn't have to actually cook herself!
