1 medium white onion, chopped
3 cloves garlic, minced
1T. canola oil
¾ lb. chicken breast, cubed
2 15-ounce can chicken broth
1 15-ounce can whole kernel corn, drained
1 15 ounce can black beans, drained
1 14.5 ounce can diced tomatoes with green chiles, drained
Shresses cheddar (optional)
Tortilla chips (optional)

Directions:
Directions:
1. In a large skillet, sauté onion and garlic and hot oil 5 to 7 minutes or until tender.
2. Add chicken breast cubes; cook until no longer pink.
3. Pour chicken mixture into a greased 4-quart slow cooker.
4. Stir in broth, corn, beans, and diced tomatoes. Cover and cook on medium low until warm.
5. Serve with shredded cheese and tortilla chips, if desired.
