Noodles and Assembly

1# Lasagne noodles
1 quart of whole milk ricotta cheese
1 large bag of shredded mozzarella
1 small bag of mixed kinds of italian cheese shredded
1 lb package of meat of choice: (e.g. ground beef, ground pork, ground italian sausage)
VEGGIE version: chopped onions, spinach, thinly sliced zucchini and/or yellow squash.

9x13 pan or glass dish

Preheat oven to 375. cook 25 mins with foil over top, then remove foil and cook for additional 15 to 20 mins. top should be bubble and brown. should let it cool for 10 mins.
1) Start water boiling for noodles. once at a rolling boil, add noodles and cook to al dente timing on the box. lay out several pieces of paper towel on countertop (you will need enough for all the lasagna noodles) begin laying cooked noodles on paper towel be careful not to tear the noodles.
2) On stovetop in skillet: start with chopped garlic then add meat. begin to brown meat. add fennel seeds, salt & pepper. cook thoroughly. When meat is cooked, drain grease, remove from the pan into an extra bowl lined with a paper towel and set aside.
3) Begin layering in 9x13 pan. Repeat steps a-e about twice.
a. spoon enough sauce in to bottom of the pan and (add little olive oil only on bottom layer). you need enough so noodles will not stick or dry out.
b. begin with a layer of noodles by laying noodles with slight overlap over previous noodle and then stagger ends of noodles as well.
c. scoop a few spoonsful of ricotta cheese onto noodle layers and spread to cover all noodles careful to not move the noodles around too much.
d. add layer of meat (or veggies if doing veggie version).
e. add layer of shredded mozzarella cheese with a little bit of mixed Italian shredded cheese.
 

Sauce

1 small can of tomato paste
1 large can of pureed tomatoes
1 med can of diced tomatoes with Italian herbs and garlic
chopped or minced garlic (fresh or prepared)
granulated sugar (needed as add to taste to reduce acidic level)

Garlic salt
salt & pepper
oregano
fennel seeds
olive oil

Make sauce in a saucepan on the stove: on a medium to low heat. start with pureed tomatoes, add diced tomatoes then tomato paste. stir until combined. add little olive oil, garlic salt, oregano and pepper to taste. final step is to add a few tablespoons of granulated sugar to reduce acidic level (this is to taste as well). once done turn off heat and set aside.
