2 Medium Acorn Squash
¼ c. Chopped Onion
½ c. Butter, melted
7½ oz can Drained Shrimp (or frozen salad shrimp)
3 c. Soft Bread Cubes
2 Eggs, beaten
¼ c. Green Olives, sliced or chopped
1 T. Lemon Juice
¼ tsp. Salt

Directions:
Directions:
Preheat oven to 350º. Cut squash into halves and remove seeds. Sprinkle with salt. Place cut side down on a baking sheet. Bake for 30-45 minutes or until soft. In a sauté pan on the stove, cook onion in butter until tender. Add all other ingredients and mix well. When squash has cooked, fill baked squash halves and return to the oven. Bake for another 30 minutes or until brown.
