Refrigerated Pie Crust
6-7 c. Apples, peeled & sliced; tart apples are best!
1/2 c. Sugar
3 T. Flour
1 tsp Cinnamon
1/8 tsp Salt

Crumb Topping:
1 c. Brown Sugar
1/2 c. Flour
1/2 c. Quick Oats
1/2 c. Butter, room temp

Optional: Caramel Sauce & Chopped Nuts

Directions:
Preheat oven to 375º. Mix together sugar, flour, cinnamon & salt. Toss with apples.
Unroll pie crust & place in pie pan. Fill with seasoned apples. Prepare crumb topping. Mix all topping ingredients. Use a fork or pastry blender to cut in butter. Top the pie with crumb mixture. To prevent over-browning, cover edges of the pie crust with foil or pie crust shield. Bake for 25 minutes. Remove foil/pie crust shield and return to oven for 25-30 more minutes or until golden brown. Remove from oven and sprinkle with chopped nuts then drizzle with caramel. Best enjoyed warm... with a scoop of ice cream!

This recipe was a family favorite every fall! I have the recipe in my mother's handwriting in a special cookbook she gave me when I got married. There's nothing like the tastes and smells of good family recipes to bring back special memories with your loved ones.
