3 egg whites
1 cup sugar
1/2 tsp baking powder
1 cup chopped pecans
20 ritz crackers crumbled
1 tsp vanilla
1 tub cool whip
toasted pecans for topping

Directions:
Directions:
Beat egg whites and baking powder until stiff. Add sugar, pecans, ritz crackers and vanilla. Pour in a buttered pie pan. ( trust me you will want to double this recipe and use a casserole dish) Cook at 325º for 30 minutes. Cool and add cool whip and sprinkle with toasted pecans.
