Oven Fried Zucchini Recipe

2 medium fresh zucchini
1 tbsp Olive oil
½ c Italian seasoned bread crumbs
2 tbsp grated parmesan cheese
Salt and pepper

Directions:
Directions:
Preheat oven to 350ºF.
Wash zucchini and slice zucchini into thin slices.
Put in bowl and toss with salt, pepper and olive oil.
Add seasoned bread crumbs and parmesan cheese.
If zucchini are large you may need to add additional bread crumbs and parmesan cheese.
Toss until all pieces of zucchini are coated.
(NOTE: I like to put zucchini in a plastic container with lid and shake until well coated.)
Pour out onto a large baking sheet coated with olive oil or non-stick cooking spray.
Separate slices.
Bake in oven for 15 minutes.
Turn zucchini slices over and continue baking for another 15 minutes.
Cooking time may vary.
The longer you bake them the crispier they will be.
Remove from oven and serve with marinara sauce.
