1 c minute rice
1 lb ground beef
1 egg, lightly beaten
2 tsp grated onion
1 tsp salt
⅛ tsp marjoram (optional)
1 dash ground pepper
2½ c tomato juice (or use 8oz of tomato sauce mixed with ½ c water)
½ tsp sugar

Combine rice (directly from box) with beef, egg, onion, salt, marjoram, pepper and ½ c of tomato juice. Mix lightly. Shape mixture into 18 balls and place in skillet (for appetizers, make balls smaller). Add sugar to the remaining 2 cups of tomato juice. Pour juice over meat balls in skillet. Bring mixture to a boil. Reduce the heat and simmer covered for 15 minutes, basting occasionally.

If you like stuffed cabbage rolls, use this short cut. Shred ½ head of cabbage and add to meat balls and juice. I make extra juice. Instead of 2 ½ c of tomato juice, I use 3-3½ cups and cook it about 5 min longer.
