Chicken Taquitos Recipe

3 c. roasted, shredded chicken (store-bought rotisserie chicken is my go-to shortcut)
8 oz. cream cheese
4 T chopped cilantro
2 T lime juice
6 oz can green chilis
¾ tsp. cumin
1 ½ tsp. chili powder
1 tsp. onion powder
½ tsp. garlic powder
1½ c. shredded pepper jack or Mexican cheese
Small corn or flour tortillas (whatever your family prefers)
Fine sea salt
Cooking spray

Directions:
Directions:
Melt your cream cheese until it is soft and melty. Add all spices, cilantro, lime juice, green chilis, chicken and cheese in a large bowl. Mix until well blended. Heat tortillas in microwave just for little bit so they are soft and won't break when you roll them. Add approx. 2 tablespoons of chicken mixture to each shell (more if you choose to use larger shells) and roll and place seam side down on a parchment/foil lined cookie sheet. Spray a little cooking spray on top and sprinkle with a little bit of salt. Bake in preheated oven at 425º for approx. 15 minutes until slightly golden and crisp.

MAKE & FREEZE:
As you roll the taquitos, place them on the lined parchment/foil cookie sheet without them touching. Then place cookie sheet in freezer. When they are frozen, remove them and put in a gallon size freezer safe bag. Label and put back in freezer. When you are ready to eat, just take out as many as you need, place on parchment/foil lined cookie sheet. Spray with cooking spray, sprinkle with salt. Bake in 425º for 15-20 minutes until lightly golden and crisp.

This recipe was discovered when I was looking for easy, home-cooked meals that I could make and freeze to send back with my kids in college. This has become a favorite recipe for our family.
