Buttermilk Coconut Pie Recipe

½ stick of butter-very cold & cubed
¾ cup flour
Ice water


Filling
1¼ cup sugar
2 tablespoons flour
1 stick of butter melted
3 eggs
1 teaspoon vanilla extract
½ cup buttermilk
1½ cup coconut

Directions:
Directions:
Preheat oven to 325º
To make the crust, take the ½ stick of butter cubes and flour and mix with a fork.
Add in 2 tablespoons of ice water and mix. Add in 2 more tablespoons of ice water and mix again. Do this 2 more times. You will put in a total of 8 tablespoons of water.
Make it into a ball and wrap in saran wrap. Chill for 30 minutes.

In a mixing bowl whisk together the sugar and flour. Pour in the melted butter. Whisk in the eggs, vanilla, buttermilk and 1 cup of the coconut. Mix well.

Take the crust out and knead it while it is in the saran wrap. Put it on a floured surface to roll out. Roll out the crust and put into a pie pan. Pour in the buttermilk filling. Sprinkle the remaining ½ cup of coconut on top. Bake 45 minutes.
Bake until golden and no longer jiggles.
