5-6 large potatoes
4 hard boiled eggs
¼ c sweet pickle relish
½ c mayonnaise
1 tsp mustard
½ tsp salt

Directions:
Directions:
Peel and cube potatoes.
Boil in salted water until fork tender.
Drain and cool a bit.
In a large bowl mix cubed potatoes with chopped hard boiled eggs.
Add pickle relish.
Mix well.
In a separate bowl, combine mayonnaise and mustard.
Mix well.
Pour over potato mixture and mix well.
Add more salt, if needed.
If too dry, add more mayonnaise/mustard mixture as desired.
Refrigerate until ready to serve
