1 c matzo meal
4 lg eggs
1/3 c chicken fat (or butter)
1/2 c sparkling soda
1/2 tsp salt
1/8 tsp pepper

beat eggs well add water, melted chicken fat then matzo meal and stir; chill several hours or over night; use small ice cream scoop to form balls; scoop and put one matzo ball at a time in boiling water; dip scoop into ice water between scoops; cover tightly and do NOT open lid for 40 minutes.
