1 lb (2c) green split peas
2 carrots peeled and
2 lb flanken (short ribs)
marrow bones if available
2-3 stalks celery with leaves
2 medium onions
1 tsp sugar
2 springs parsley
1 tsp salt
1/4 tsp pepper
1-2 qt water (to cover veggies)

Directions:
Directions:
add flanken to pot; bring to boil; skim off scum and any fat; add veggies, split peas, seasonings and bones; simmer 2 1/2 hours;remove meat and bones; puree remainder in blender; add meat and bones to soup and season to taste.

Meat great with horseradish; scoop out marrow from bones and serve on rye bread with a little salt
