10 Habaneros
˝ of a Pineapple
2 Cups Carrots
2 Cups Onions
3 Cloves of Garlic
2 Cups of Water
3 tbsp Lime Juice
3 tbsp White Vinegar
1 tsp of Salt

Directions:
Directions:
Sauté garlic in coated saucepan. Once the garlic starts to give off its aroma, add the onion, carrots, and water. Bring to boil, reduce heat and simmer until the carrots are soft. Remove from heat. Add habaneros, pineapple, lime juice and salt to the carrot mixture. Place in a blender and puree until it reaches a smooth consistency. Pour into sterilized bottles or jars and seal. Keep refrigerated.

I'm the only one in our household that will eat this sauce; it's that spicy. When the Habaneros are ripe in the garden, I like to make several batches to give away to my extended family and friends. This sauce pairs well with fish and white meats. The citrus flavor comes first; then the heat from the Habaneros comes in a few seconds later. Use gloves when handling the hot peppers and avoid touching your eyes. Deseed and devein your habaneros for less heat.
