2 Hard-boiled eggs, cut into slices
2 c. Beef or Pork, cooked and cubed
1 Medium Carrot, shredded
½ c. French Dressing
⅓ c. Mayonnaise
1 c. Peas, cooked and drained
2 c. Potatoes, cooked and cubed

Directions:
Directions:
In a large bowl, combine all ingredients except peas. Mix well. Add peas and toss gently. Chill before serving.

This sounds like a crazy combination, but it is one of our favorites. We purposely buy a larger roast to have leftovers to make this. It is hearty enough to have as main dish.
