1 section pork spareribs (about 4 lbs)
Blackberry sauce (below)
¾ cup blackberries, rinsed
mint sprigs

Blackberry Sauce:
1¼ cups blackberries, rinsed
¼ cup each: ketchup, honey, brown sugar, minced fresh ginger
1 tsp. pepper
½ tsp. salt
1-2 tsp. hot sauce

1. Rinse ribs ribs and pat dry. Trim and discard excess fat.
2. Prepare BBQ for indirect heat. When grill is medium hot, lay ribs on it and turn as need until well browned, 40-50 minutes.
3. Meanwhile make blackberry sauce. In a food processor or blender, combine blackberries, ketchup, honey, brown sugar, ginger, pepper, and salt. Whirl until the berries are pureed. Add 1-2 tsp. hot sauce, depending on your taste. Pour into a 1 quart glass measure and cover loosely with plastic wrap, leaving vents for steam. Cook in a microwave, stirring occasionally, until berry mixture is reduced to 1⅓ cups, about 8 minutes.
4. Base 1 side of ribs with half the sauce. Turn ribs sauce side down and cook until sauce browns and forms a thick sticky glaze, about 10 minutes. Baste top of ribs with remaining sauce, turn over, and cook until sauce browns and forms a thick sticky glaze, about 10 minutes longer.
5. Transfer ribs to a platter and garnish with blackberries and mint.
