Italian Drunken Noodles Recipe

8 ounces pappardelle noodle uncooked
Oil
4 spicy Italian sausage links casings removed
1 large onion quartered and thinly sliced
1 ½ tsp salt
1 tsp Italian seasoning
½ tsp cracked black pepper
1 red pepper cored and thinly sliced
1 orange pepper cored and thinly sliced
6 garlic cloves pressed through a press
½ cup white wine
1 28 ounce can diced tomatoes with juice
2 tbsp parsley chopped
¼ cup fresh basil julienned

Directions:

Prepare the noodles according to package instructions, drain, and set aside

Heat 2 tbsp oil in a large pan over medium high heat.

Crumble the sausage into the pan in small chunks (you want to keep sausage somewhat chunky).

Brown meat on each side and remove with slotted spoon when cooked and place in a bowl.

Add the onions in pan and allow to caramelize about 5 minutes. Continue to stir to keep from burning. Add a bit more oil if necessary.

When onions start to become golden, add the salt, Italian seasoning and pepper and combine.

Add the sliced pepper and sauté for about until slightly tender.

Add the garlic and once it becomes fragrant add the white wine and reduce until almost completely reduced.

Add the diced tomatoes with juice and the sausage meat and combine. Simmer or 3 to 4 minutes.

Drizzle oil to create a silky rich flavor and stir in the parsley and half of the basil.

Add the cooked pasta and toss gently using tongs

Plate noodles and add basil as a garnish.
