2 pkg. dry yeast or 2 cakes compressed yeast
1 c watr
1 tsp sugar
2 c scalded milk
2/3 c melted shortening
3/4 c sugar
4 tsp salt
2 beaten eggs
10-11 c sifted enriched flour

Directions:
Directions:
Soften dry yeast in warm (110º) water or compressed yeast in lukewarm (85º) water
Add 1 tsp sugar to the yeast mixture
Add milk, cooled to lukewarm, shortening, 3/4 cup sugar and salt
Add eggs; beat well.
Add flour to make soft dough, knead on lightly floured surface till smooth and elastic.
Place in greased bowl turning once to grease surface and cover; store in refrigerator

About 2 hours before serving - shape into as many rolls as needed -
Let rise till double in bulk

Bake at 425º for 15-20 minutes

Punch down unused dough and return to refrigerator.

Dough can be shaped into pizza circle - let rise and bake
